banana chocolate chip muffins

adapted from "basic muffin" recipe by Carol Fenster.

2 large eggs/egg replacer
1C milk alt (I used original rice)
1/2C canola oil
1t pure vanilla extract
2 bananas mashed together

2/3C sweet rice flour
2/3C tapioca flour
2/3C sorghum
1C sugar
1T baking powder
1 1/2 t xanthan gum
1t salt
1-2t cinnamon
1/4-1/2C enjoy life or other alternative chocolate chip (optional)


Mix liquid ingredients and dry ingredients in separate bowls. Mix together - add more milk if too dry, but mixture should be pliable, not too liquidy. Bake at 375 for 20 minutes.
