1/2C brown rice flour
1/2C potato flour
1/2C sorghum
1/2C buckwheat
1/2C tapioca
1T baking powder
3/4C brown sugar
1 1/2t xanthan gum
1 1/2t cinnamon
1t salt
1/2t nutmeg
1/4t allspice
1 1/2t egg replacer powder
2T molasses
1 can Libby's pumpkin pie mix (I haven't checked to see if this is gluten free)
2C enjoy life choc chips.
Mix dry ingredients, add molasses and stir in well. Add can of pumpkin pie mix and mix until blended. Do yourself a favor and use a big bowl. Bake at 375 for 15-20 mins. My oven cooked them perfectly in 17! You can also add raisins or nuts, or omit all of the extras and just have pumpkin spice cookies. Enjoy!
