seriously?

I was lazy and kind of tired of making chocolate chip cookies that didn't turn out. SO, I decided to convert the Toll House cookie recipe. You know, the one on the back of the bag. And they.are.fantastic. !!! I am irritated that I didn't try this earlier, I tried some bizarre tasting recipes... You can probably play around with the flour blend.

Almost/"Original Nestle Toll House Cookies"

3/4C tapioca
3/4C rice
3/4C sorghum (I think you could sub buckwheat here if your name is Heiney and you don't like sorghum)
1t baking soda
1t salt
2t xanthan gum
1/2C butter crisco
1/2C earth balance
3/4C granulated sugar
3/4C packed brown sugar
1t vanilla
2 eggs or egg sub (I used egg replacer w/ a spot of oil and they are perfectly fine)
2C Enjoy Life or some other fake chocolate chips

preheat to 350

combine flour, baking soda, salt and xg in small bowl. Beat crisco, butter, sugars and vanilla extract in large mixer bowl until creamy. Add egg replacer, one "egg" at a time, beating well after each addition. Gradually beat in stirred flour mixture. Stir in morsels. Drop by rounded tablespoons onto ungreased baking sheet. Bake 9-12 minutes (I used convection and it took 9, so it may take slightly longer) or until golden brown. Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.

Might also be tasty as a cookie cake!
