Lunch roll ups

Roll Ups

Ham and Cheese, Peanut Butter and Jelly, Pizza (the three that are most often made)

Heat, in a dry, hot frying pan, a corn flour tortilla. (I've tried them all. Imo, La Banderita Brand is, by far, the best.) Flip it over when one side is warm. Warm other side. Place on a half size piece of paper towel.

OR

Fold 2 in a paper towel and nuke for 20 seconds. Done. They're warmed from being in the fridge and now very pliable. No using the stove and burning fingertips. If I want the cheese to melt a little, I'll put a warmed tortilla on a paper towel in the microwave, place the cheese on top, and nuke an additional 15-30 seconds (check to see how long you need.) Roll up as usual. Mmmm.... (I even put the pepperoni on the cheese before reheating.)

Ham and cheese: Place one slice cheese and one slice ham on tortilla, roll up quickly, then roll up in paper towel.

Peanut butter and jelly: Spread thinly with peanut butter, roll up quickly, then roll up in paper towel. In a little container, put favorite jelly. Dip roll up in jelly and eat.

Pizza (not CF): Place one slice provolone or mozzarella or other on tortilla, sometimes I let the cheese melt on the tortilla while still in the pan for a moment, roll up quickly, then roll up in paper towel. In a little container, put pizza sauce. Heat slightly. Dip roll up in sauce and eat.

So far, these have worked the best for any long term carrying around. Once the roll ups are cool, I put them in sandwich bags (usually two are nice and filling.) They don't get soggy or fall apart (part of my experiments with bread problems.) The kids are very happy with them and, ah, I really like them too (especially the pizza one tongue.gif )

Oh, and don't let the tortillas brown.
